St. Moritz Medical’s Festive Spinach Salad

Start with a bed of spinach and add a layer of fresh, sliced Fuyu persimmons on top

To the next layer add fresh cranberries roasted in olive oil and a little bit of Kosher salt

Top with lightly toasted pecans and a dressing of olive oil, rice vinegar, orange juice, and stevia or brown sugar
