Sweet or Savory Roasted Chickpeas, Plus Homemade Hummus

Chickpeas, also commonly known as garbanzo beans, are a great choice to use as an addition to a meal or as a snack on their own. They have become quite a trendy food in the last few years. Full of fiber, mild in flavor, and versatile in cooking techniques; chickpeas can be used for many dishes. They can be bought canned or dry and used in a variety of flavor profiles. Add them plain to soups, salads, or blend them up to make homemade hummus. You can even buy chickpea pasta and find recipes to make “cookie dough” with them.

 

For the first two recipes, we jazz them up by adding seasonings and spices for a fun snack or topping. The first flavor option is for “Mexican Roasted Chickpeas”, which make a great topping to your taco salad or can be eaten by themselves as a snack. The second option is for “Cinnamon Sugar Chickpeas”, a perfect snack for when you are craving something sweet, flavorful, and full of fiber.

 

At the end, we’ve included a simple recipe for hummus with topping and serving suggestions.

 

Roasted Chickpeas 2 ways

 

Mexican Roasted Chickpeas

1 can of chickpeas

Drizzle of olive oil

1/4 teaspoon salt (optional)

1/2 teaspoon smoked paprika

1/4 teaspoon cumin

1/4 teaspoon garlic powder

1/2 teaspoon chili powder

1/8 teaspoon black pepper

Juice from ½ fresh lime

 

Cinnamon Sugar Chickpeas

Drizzle of olive oil

2 tsp white sugar, brown sugar, or stevia

1 tsp cinnamon

 

Preheat oven to 425 degrees Fahrenheit. Rinse chickpeas under cold water until foaming stops and dry excess water off. Toss chickpeas in desired seasoning mixture and oil. Lay out flat on a baking sheet and roast in the oven for 15 minutes for a slightly soft version. For a crunchier chickpea that acts more like a crouton, mix around after 15 minutes and return to oven to check in another 15 minutes.  

 

Homemade Basic Hummus

1 can of chickpeas

½ c Tahini

3 Tbsp olive oil

1 clove of fresh garlic, or 1 tsp of garlic powder

Juice from 1 lemon

½ tsp cumin

Salt & pepper to taste

Topping suggestions:

-Dash of paprika and a swirl of olive oil

-Homemade pesto

-Olive tapenade

-Roasted red pepper puree

 

Directions:

Add all ingredients to a food processor and blend until smooth, stopping to push puree down from the sides with a spatula as necessary. Transfer to bowl for serving and top with desire toppings.

 

Serving suggestions: Serve with fresh vegetable, on your favorite sandwich, or use as part of a salad dressing or pasta sauce.
