Customizable Burrito Bowl Idea w/ Taco Seasoning Recipe

Burrito bowls are a crowd pleaser for everyone in the family due to how easy they are to customize for each person. We are able to put out a large variety of topping options and each bowl can be customized as it is made by adding only what you want.

To lighten up traditional burrito bowl recipes, we offer a few practice substitutions. Instead of refried beans, we recommend whole pinto or black beans. If buying canned beans, look for low sodium options or rinse the beans under cold water before use. If you cannot bring yourself to give up the texture and flavor of refried beans, some canned fat-free versions are available in the stores with ingredients list of only pureed beans with a surprisingly familiar taste and texture to traditionally refried beans. Rather than beef, we recommend ground turkey or shredded chicken for your protein. Another option is to keep it plant-based and add extra veggies in place of the meat.

Ingredient Layering Ideas

· Base layer: Bed of preferred lettuce

· Grain layer: Brown rice or quinoa

o Cook grain according to box/bag directions. Salsa or lime juice with chopped cilantro can be added for a more flavorful option.

o Quinoa is a higher protein option if looking to keep the bowl plant-based.

· Bean layer: black beans or whole pinto beans

· Vegetable layer: any vegetables you have around can be added. Sautéing zucchini, bell pepper, onion, and yellow squash in a small amount of olive oil and taco seasoning can make a great springtime addition to the bowl.

· Meat layer (optional): shredded chicken, ground turkey, or ground chicken can be cooked in taco seasoning

· Topping suggestions: fresh avocado, salsa, lime juice, jalapenos, fresh shredded carrots, small amount of cheese

Taco Seasoning Recipe

2 Tbsp chili powder

1 Tbsp cumin

1.5 tsp smoked paprika

1.5 tsp onion powder

1 tsp garlic powder

1 tsp Black pepper

1 tsp salt

Directions: Add all ingredients a bowl and mix well. Use to season to taste when cooking vegetables or meat.
